Origin
An Awadhi inheritance.
Guzeea is an Awadhi delicacy, and the earliest mention of it reaches back to the thirteenth century. It is said to be a modern reading of a far older sweet, apupa: flour and honey, fried in ghee, written about long before anyone thought to set down a recipe.

Everything is measured by weight, not by habit, so the box you get in summer tastes like the one you got in winter. The last line is measured by one person only.

How a box is made
One morning, one batch at a time.
Fill
The dough is rubbed with ghee and left to rest while the khoa cools. Filling goes in warm, measured to the spoon, so no one Guzeea is generous at the cost of the next.
Fold
The edge is wetted, then folded shut in a hand mould that presses the seam into a rope. It is the only part you can see from the outside, so it is the part that gets checked twice.
Fry
A long, low fry, turned by hand until the shell goes pale gold and sounds hollow when tapped. Cooled on a rack, boxed only once cold.

How do I place an order?

How soon will it arrive?
We fry to order, so a box placed today goes out the next morning. Large and festival orders need at least three days.
Where do you deliver?
Anywhere inside the valley. For anything further, message us first and we will tell you honestly whether it will still be worth eating when it lands.
How is a Guzeea different from a shop one?
Different recipe, different method. Ours is made by hand in small batches, filled by weight and fried the morning it goes out, which is what leaves the shell light instead of heavy.
How long does a box keep?
Best the day it arrives. Kept sealed and away from heat, a box holds its texture for several days.
